But not only… You can feel the Rostang touch, generous and enveloping. Dishes to savor, joyful, bistro. A few weeks ago, Alexandre Zida’s oyster mushrooms from Paris, watercress cream, hazelnuts and wood sorrel and chicken egg, delicious; Breton artichokes, smoked sheep cheese, apple and peanuts, spring. White asparagus, bottarga and bergamot: a fun pairing (13 euros). Then gnocchi, parmesan, peas and ginger butter sauce. The gnocchi lack a bit of softness in their heart, but the rest is damn attractive, peas that crunch to the bite and ginger butter (17 euros). And the dish of the day? Demented: Easter lamb, chops on one side to suck to the bone and, on the other, the flesh to bite your appetite. To accompany it: a delicious combo of peas, salicornia and a potato pan (29 euros). Sweet and indulgent. g
