In Nice, L’Azur, the new resolutely southern restaurant at the Radisson Nice Airport hotel, delights tourists and professionals from the Arena.
L’AZUR RADISSON NICE AIRPORT – Opposite Nice Côte d’Azur airport, in place of the former Park Inn, the Radisson Nice Airport hotel recently opened, which has a restaurant called L’Azur, which opens in an outdoor version by the pool as often as possible and folds up inside when the weather requires it. Fabien Gentou, the hotel manager, wanted the restaurant to be an ambassador of local culinary culture. He asked his young chef Gaëtan Debes to imagine a 100% Mediterranean menu for an international and local clientele. The bistro menu offers six starters, six main courses and six desserts that change with the seasons. The chef creates lively, colorful dishes with always a touch of originality and a strong desire to promote local producers (Desorgues & fils tomatoes, secca d’Entrevaux…). We discovered with pleasure the breaded and fried anchovies accompanied by a parsley mayonnaise, the perfect organic egg and its chickpeas in two textures (salad and hummus) and the sea bream in tartare, kiwi and creamy mint avocado. For locavores, the secca d’Entrevaux (dried and salted beef cured ham) was carved into a carpaccio and served with arugula and parmesan, Desorgues & fils tomatoes of different colors, sprinkled with olives and seasoned with pesto, spun the perfect love with a creamy burrata, the just-seared bluefin tuna flirted with a Niçoise salad. Each plate made you want to try the adventure.
Continuing to explore the menu, we opted for a Charolais beef tartare, Provençal version with olives, pine nuts which we chose to accompany with sweet potato fries (a real success!) and a fillet of sea bream with Zucchini from Oustalet, confit garlic cream, pearled with olive oil. Two choices that delighted our palates.

The supreme of free-range chicken with herbs from the garrigue, panisses with olives, new onion, the little stuffed vegetables from Nice and the saffron risotto from Provence with artichokes are kindly requested to wait for our next visit! Chef Gaëtan Debes, who arrives from the Radisson Blu Paris in Marne La Vallée, has however already worked on the Côte d’Azur alongside Christian Sinicropi, at the restaurant La Palme d’Or in Cannes. Fruits were in the spotlight on the dessert menu: strawberries, apricots, grapefruit alongside a chocolate fondant and a gourmet coffee. Our favors went to a strawberry tartare with basil, refreshed with strawberry sorbet and a chocolate fondant, Tonka bean ice cream, fleur de sel dairy caramel. To accompany this sunny lunch, we chose a glass of the Augustine rosé cuvée, an organic wine from Château d’Astros and a glass of Côtes du Rhône AOP from Domaine Andéol.
Located in the heart of the Arénas business district, L’Azur will quickly become the official canteen for gourmets looking for good products, well showcased by a young chef who has already integrated all the codes of Mediterranean cuisine. See you soon !
